There are many kinds of tacos in Mexico, but these are my favorite! The beef is covered in a kind of adobo/dry rub and cooked on a vertical skewer, like a kebab, there is a vertical back-burner and the meat is rotated gently, when they prepare your taco, the guy slices thin cuts of meat onto your tortilla, the adds the guacamole, onion and cilantro and the sauce, you add your lime and that’s it! So good!!
